Hi, James. I don't know of an easy way to change the download location in Microsoft Edge. The only way I know is,

1. Open Edge.

2. Press ALT, followed by F, then S for Settings.

3. Find the categories of settings, and arrow down to Downloads.

4. TAB to the Location button, and press ENTER. Then you can change the download location.

Bill gave how to make the change globally. I find that it changes based on where I put the last item I downloaded. When I press enter to download something, I wait for the computer to say it needs attention and to press control j (I think that is the one it says). I do that and can tab or shift tab through the options-open, save, etc. Press save and the old dialog box showing the name of the item to download pops up. Then shift tab up twice to get to where you can find a place to put it.
