Open a PDF in Acrobat Reader and it should ask if you want to use this application next time, check the "Always use this application". If that doesn't work, go into the properties of a PDF with Alt+Enter, click on the "Change" button next to the file type and select Acrobat Reader from the list of available programs.

You can perform these steps to assign a default application to any file type in Windows.
You can close File Explorer. Windows will use the selected application for all documents of the file type you just configured.
