Kevin, I am using MS Word 2007 and to get the word count, I use
Insert + numpad 3. I wouldn’t think that this would have changed in Word
16. This command also gives you the number of pages in the document.

In 2016;
Hit f6 it puts you in the status line at the bottom of the doc and says page 1 of 1 and then arrow across to the right and it says words and other things about the doc.
When you have your answer hit f6 and your back in the body of the doc.
By the way the person who said alt r in 2016 puts you in the review tab of the ribbon not a word count.

Word count is on the status bar. You can read the status bar with JAWSKey+page down. You can also press F6 and tab through the items on the status bar. While focused on the status bar there, you can use the context menu to choose which items are and are not displayed on the status bar.

The Jaws command Jaws Key+NumPad3 simply reads the status line and while this includes the number of pages and words, it does not give you the same detailed information you may want by going to Review > Wordcount with Alt+R followed by W as Brian already pointed out. I opened a Word document and wrote “This is a test” without the quotation marks of course. Pressing Jaws Key+NumPad3 says the following (I only included the first parts of what is spoken):
Page Number Page 1 of 1 Word Count 4 words
If I press Alt+R W I get this (you have to use the Jaws cursor to review the information):
Word Count Statistics: Pages 1 Words 4 Characters (no spaces) 12 Characters (with spaces) 15 Paragraphs 1 Lines 1 Include textboxes, footnotes and endnotes checkbox checked Close

The only keystroke I know of, is the F6 keystrokes and you have to tap to the word count we might have to control tab as well if it’s not there on the first ring.

Control shift G does give the word count.
It is universal to all versions of Word. But to press escape to close the dialog.

Control, Shift + GInteresting, this brings up the exact same Word Count dialog as ALT+R,W does. When you hover over controls it will typically show you if there is a shortcut that is of the form Modifier Key + Single Additional Key. The Word Count control doesn't do that and I'm guessing that it's because CTRL+SHIFT+G (and it is a triple key press shortcut) is a triple key press shortcut.
