Hi,
I use Jaws 2019 with Excel in Office 2016 at work every day and have no major issues. I don’t mess around with charts, graphs, et cetera, just routine data entry, and it works fine.

There are several options for dictation depending on how much money you can spend. I haven't tried dictation that comes with office 365, so if somebody else has, I look forward to hearing the result.

Before trying to use dictation software, try the free Send to Braille utility from American Printing House. It also puts in a “back from braille” feature.

You might need to keep an older copy of Jaws installed for that program.
I still use Office 2000, because it does all I need it to do, and Jaws 2019 does not work with Excel, but earlier versions

My experiences were similar. The sighted trainer quit or got fired by the agency that hired her without finishing the job, promised she would not leave before finishing and of course left me hanging.

The e-mail address issue was one cause by a JAWS group setting. It has been corrected so that even I now see the full address in the original message (and Mario's which has no embedded space).
