Here is how to change the OCR that JAWS uses. However there are several key strokes to do so Insert 6,
control shift D
type OCR in search arrow down and check or unchecked use Microsoft default. tab

Well, the actual editor inside doesn't work as well as I'd like for screen-readers as far as I can see so far. I think it'd be possible to scan stuff and then convert to your file format of choice and

I currently don't have OB installed on this computer, and I have a PDF which is a damned PDF manual, don't you just love those things?

I guess that it stops loading its own copy of Eloquence and ulets your screen reader handle it. It works, I just finished making the changes to both programs.
