although your doing the correct procedure, I'm not sure why the messages
don't go into the draft folder.

while creating/composing the message,
press ctrl+s=save,

Hi,
If you want to save an email half way through your compose, simply press
Control + S. this will save a copy of your email in Drafts folder.

I am running Outlook 2010 and have it update automatically. I have not
experienced the issue you shared yet. I just did a trial Escape and Ssave,
and found the test email in the draft folder as

Although JAWS support for Eudora is poor, I have used eudora since probably 1995 and like it very much. I did have to copy the Eudora files from JAWS14 to later JAWS versions, though, to use it
