You can absolutely copy in kindle. Select the text you want to copy. Press control c as you normally would to copy. It will put you in an area of check boxes you can arrow through to select different

As Richard said, the Kindle for PC app is very accessible. If you're reading for enjoyment, then the IOS app is great. If you need to navigate text, copy, etc., the I would recommend Kindle for PC.

I use it on my iphone. Fairly accessible if you are reading a novel. Wouldn’t want to have to use it for anything academic!
