While in an office program, open file, then options and arrow down to the Save category. There is an option in there where you can tell Office where you want to save things by default. I assume that

You can make your Documents folder a OneDrive folder and thus, the saving is automatic.
I am not sure of the exact procedure for this, but I have seen systems where the Documents folder was, by

I often get notices from edge about some dialog not being focused and that I should press alt+shift+a to get there but alt+shift+a doesn't do anything. I susally just use f6 to get to the address bar,

It seems you are using Office 360. I am using Office 2016.
Maybe I need to call the MS Accessibility line to see if Office 2016 offers the drop down

Unfortunately, that key does not say Insert when numbers lock is off. Others keys which are not verbalized include Windows, Control, and Alt.
