I would say Jaws is not the problem.
I have Jaws running find on 2 GB of RAM on one of my computers.

The best way I know is in the window that says listen now, tab over to the don't allow button and check it. Then press okay.

That's why I said it depends on who you are protecting it from
Quite often, I mark some of my files as read only to protect them from me
accidentally modifying them.

just to point something out, changing the attribute of a document file to read-only protects the file from being saved as a modified file. so it doesn't prevent the document from being read. for that,

How much RAM do you have? I've got 8 gigs and it doesn't seem to be enough, especially when I've got Jaws, Outlook and OneDrive open at the same time.

There is no really good method to do this. Most can be worked around if the document is still in DOCX format.
It's not perfect, but I find it far more effective to save as PDF and send that out.
