Another thing that can be attempted is to disable Outlook add-ons. These can sometimes monkey around with Outlook.
Obviously you don't want to disable an add-on that you need, but you'd be surprised

So I implemented your suggestion of disabling graphic acceleration,
and that has certainly improved things, but it still becomes sluggish

Or you could use Open VPN which is an open source vpn client for windows. It's free and all you need do is to download the vpn server's .opvpn files, put them in the Open VPN's config

Yes, lack of RAM can make a difference especially if running numerous apps / programs. However I use JAWS with 4gb on my laptop and have few problems other than the crashes I described.
