I don’t think it matters, unless you have vision.  It’s something with the color scheme of the menus and impacts the theme across all of your office products.  I played with it a bit when we first went to Office 365 at work, but can only find that it changes the colors and doesn’t do anything for me, since I use a high contrast Windows theme.  I’m surprised they even offer it, given that Windows has color themes.
