When I do insert f12 Jaws only says the time, no date. How do I get it to say the date?

Depending on your computer model, you should be able to use function key plus escape to toggle your function keys back to their primary functions. Then jaws key plus F 12 should start working again without having to do acrobats trying to press jobs key plus F 12+ function. LOL.

Try using the special FN key, usually left of the space bar, along with F12.
Otherwise, you can do insert + B for the task bar and arrow to the
time if you have it set to display the time there.
