In Word 2007 and 2010 you can press enter on the multi-level list button ontoggle quoted messageShow quoted text
the home tab. It will let you choose from all different kinds of bullets
and various styles of outline numbering. You tab to demote an item and
shift tab to bring an item out again. Using the headings method is great if
you're going to insert text later, but it isn't really necessary if you just
need a basic outline. Also, your fonts will be all different styles and
sizes if you use headings to do this.
