The fact is that both Microsoft and Google give users the option to opt out of a very great deal of what they collect. The default is "you're all in," but a quick web search turns up where to go either in one's Microsoft Account, or Google Account, to turn off almost all of it.
In the case of Google, if you're logged in to your Google Account: https://myaccount.google.com/data-and-personalization
In the case of Microsoft: https://account.microsoft.com/?ref=MeControl as well as cruising through your Privacy settings on your computer, too.
Companies are going to set defaults to their advantage, and always have. Individuals should know this by now, and if it concerns them, take the steps to change those settings as close to possible as the way they'd like things as they can.
