a coworker just bought a tutorial for Goldwave that she really is impressed with. It includes scripts, sample files for practice, and lots of detailed instruction. She said it was around $70.
This is not an endorsement, just sharing information. I taught myself Goldwave by reading the manual and trial and error, with the occasional email to the developer.
But, some people love tutorials.

Press Windows key plus the letter R
When the “Run” dialog appears, type:
winver
Your screen reader will speak the exact Windows version and build.
I have Windows 10.

Goldwave is my all time favorite application for recording.
You will want to read the manual sections about selecting your recording
source.
You also will want the Goldwave scripts for Jaws, in which case it works

I'm looking for something that I can record something from iTunes or
