OK, try this, Alt+T, down arrow, up arrow. That should take you to the last item in the Tools menu, in Thunderbird 91 it is called Preferences, if you are running a newer version they might have changed it to Options.

You probably need to go into the Thunderbird settings and turn off some or all of Thunderbird's methods of notifying you that you have new email. I turned off all of them except for playing a sound and JAWS doesn't say anything when new messages arrive.
